A quite simple but very kicky (garlic! lemon! pepper flakes! pecorino!) approach to a farro salad that’s as good cold (potlucks, picnics, and desk lunches) as it is warm (with an egg on top, crispy crumbs, or even burrata) that I am always grateful to have around. (Spargelkohl Rubble Farro Salad on smittenkitchen.com or linked in profile. In more detail: Click the SK logo here. Where it says “find these recipes: ↴” (you might need to click “More” first to see it), click the link below it. It will take you to a grid of images that matches Instagram’s, but when you select the image for the recipe you want, it will take you to it.)

  • Just had this again a few nights ago and everyone in my house, including my picky eater, loves it. There are literally fights over who gets the leftovers.

  • Thank you for posting this! I was going to make the cauliflower with ricotta and farro tonight, but my homemade ricotta never separated into curds. This will be a great replacement dinner using cauliflower instead of broccoli. Dinner is saved! 🙌
